Mango Cardamom Protein Bites
Bringing back an old fav. No bake, no junk, chewy protein bites! Perfect as a pre/ post workout or afternoon sweet snack
INGREDIENTS (makes 9-12 bites)
2 cups raw almonds
¼ cup dried ‘no sugar added’ mango
½ cup unsweetened flaked coconut
½ cup rolled oats
2 scoops/45g vanilla protein powder (such as Bob’s Red Mill Vanilla Protein Powder)
⅓ cup maple syrup
1 tsp cardamon (or cinnamon if you prefer)
1 pinch salt
½ cup hot water
INSTRUCTIONS
Blend the raw almonds, oats and coconut in a food processor or high powered blender until a fine meal texture is formed, add to a medium bowl, set aside
Blend the dried mango (you may need to dice the mango up first depending on the powder of your blender)
Combine the almond meal and mango and add protein powder, salt and cardamom powder
In another bowl, stir together the maple syrup, and hot water. Add dry ingredients to the bowl and combine well with your hands*
Press mix down firmly into a lined baking dish. Cool in fridge for 1 hour then cut into squares. Store in fridge
*If the mix is too wet, add a touch more protein powder, too dry add more hot water and/or maple syrup
